Preheat your oven to 350°F and coat a baking dish with butter or nonstick cooking spray.
Start by making your filling by cutting your cold butter into tablespoon pieces. Add the butter, flour, brown sugar, and cinnamon to a large mixing bowl. Use a large fork or a pastry cutter to combine the ingredients until the butter is broken down into pea-sized pieces. Set aside.
Make your filling by adding the butter, corn syrup, heavy cream, and brown sugar to a pan or skillet. Stir ingredients until the butter is completely melted and the mixture is smooth.
Add the bananas, vanilla, and rum extract, if using. Fold the bananas until they are coated in the sugar mixture.
Pour the banana mixture into the pan and sprinkle the topping over the bananas. Bake the cobbler for 40 minutes.

- Use ripe, yellow bananas. Green bananas are under-ripe. They are firmer and less sweet, which affects the outcome of the dessert. You also don't want to use over-ripe bananas which may be too soft.
