Baked Pork Chops and Potatoes

These Baked Pork Chops and Potatoes make a quick and easy weeknight meal that’s still plenty flavorful. It’s hearty, tender, and satisfying!

Ingredients

  • pounds baby potatoes halved (we used a mix of red,purple and yellow)
  • 3 tablespoons olive oil divided, plus more if needed for brushing
  • 1 teaspoon garlic powder divided
  • 1 teaspoon smoked paprika divided
  • 1 teaspoon Italian seasoning divided, optional
  • ¾ teaspoon salt divided
  • ½ teaspoon freshly ground black pepper divided
  • 4 boneless center-cut pork loin chops about ¾ inch thick
  • Optional: chopped fresh parsley and lemon wedges for serving

Instructions

  • Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper or lightly grease it with cooking spray.
  • Add the baby potatoes to the prepared baking sheet. Toss with 2 tablespoons olive oil, ½ teaspoon garlic powder, ½ teaspoon smoked paprika, ½ teaspoon Italian seasoning, if using, ½ teaspoon salt, and ¼ teaspoon black pepper.
  • Arrange the potatoes cut-side down in a single layer. Bake for 25 minutes.
  • While the potatoes bake, pat the pork chops dry with paper towels. Rub them with the remaining 1 tablespoon olive oil.
  • Season both sides of the pork chops with the remaining ½ teaspoon garlic powder, ½ teaspoon smoked paprika, ½ teaspoon Italian seasoning, if using, ¼ teaspoon salt, and ¼ teaspoon black pepper.
  • Remove the baking sheet from the oven and turn the potatoes. Arrange the pork chops between the potatoes, leaving a little space around each chop.
  • Return the pan to the oven and bake for 7–10 minutes, or until the potatoes are golden and fork-tender and the pork chops reach an internal temperature of 145°F. Begin checking the pork chops after 7 minutes to prevent overcooking.
  • Transfer the pork chops to a plate and let them rest for 3–5 minutes.
  • Garnish the pork chops and potatoes with chopped fresh parsley and serve with lemon wedges, if desired.

Notes

  • Baby potatoes need at least 30 minutes to become tender, so they get a head start in the oven. If they need more time after the pork chops are done, remove the pork chops and return the potatoes to the oven.
  • Use the cooking time as a guide, but always check the pork chops with a meat thermometer. They’re ready when the thickest part reaches 145°F, then let them rest for a few minutes before serving. 
  • Leave a little space between the potatoes and pork chops so everything cooks evenly and browns nicely. If the pan feels crowded, divide the ingredients between two pans instead.
