Ingredients

  • 1 box (16 oz) bowtie pasta rotini, penne or your favorite short pasta shape
  • 1 ½ cups cherry tomatoes halved, reserve a few for topping, or grape tomatoes or chopped tomatoes
  • 2 cups chopped lettuce salad mix or chopped romaine or head lettuce (iceberg)
  • 1 pound bacon cooked and chopped, plus more for topping
  • ½ large red onion diced
  • 1 ½ cups ranch dressing

Instructions

  • In a large non-stick pot, cook the pasta according to package instructions. Drain and set aside while you prepare the other ingredients.
  • In a large bowl, mix the pasta, cherry tomatoes, lettuce salad mix, bacon, and red onion.
  • Gradually add the ranch dressing to the pasta mixture and fold it in well until completely incorporated.
  • Chill for thirty minutes to one hour.
  • Add some tomatoes and bacon to top of salad right before serving.
