Get out ingredients for chicken.
Combine chicken, egg whites, and salt in bowl.
Place cornstarch, flour, and baking powder in a resealable bag, shake gently to combine.
Add chicken mixture to cornstarch mixture in the bag.
Slide the top of the bag to seal, and shake vigorously to thoroughly coat chicken; set aside.
Preheat air fryer to 400 degrees.
Spray the basket or tray of your air fryer with oil.
Fill your basket or tray with a single layer of the chicken. Making sure to shake the excess cornstarch off before adding each piece to the basket/tray. I usually dump chicken out of bag to allow each piece of chicken to be shaken and excess cornstarch removed.
Spray the chicken with oil, then place in the preheated air fryer.
Cook the chicken for 6 minutes, then flip all of the pieces over, spray with oil, then place back in the air fryer for another 5-6 minutes.
Chicken is done when it has an internal temperature of 165 degrees.
Repeat steps 6-10 until all of the chicken has been cooked.
Toss sauce and chicken in a large bowl.
Stir until chicken is evenly coated.
Serve, garnish with scallions and sesame seeds.
