Smoked Chicken Salad

This smoked chicken salad recipe takes very little work for a lot of flavor. Smoked chicken salad is the perfect appetizer for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts no more than 1 inch thick, trimmed
  • ½ cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 2 celery ribs minced
  • 1 shallot minced
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh tarragon
  • Salt and pepper to taste

Instructions

  • Gather all the ingredients needed.

  • Coat chicken breasts in dijon mustard and then season with salt and pepper.

  • Smoke the chicken at 250* for about 2 hours or until chicken reached 165*

  • Remove the chicken from the smoker once cool. And chill in the fridge for 30 minutes to one hour or until the chicken is cold.

  • While chicken is chilling mix together mayo and lemon juice
    Mayo and lemon juice mixed well inside a bowl.
  • Once chicken is cooled pat dry with a paper towel, the cut or shred.
    Chicken cut into small pieces.
  • Add celery, shallot, parsley,chicken and tarragon to mayo and lemon juice mixture; toss to combine.

  • Season with salt and pepper to taste.
