Smoked Cauliflower
Smoked Cauliflower is an easy side dish that is full of smoky and garlic flavor. This makes for a great low carb vegetable side dish.

- 1 large head cauliflower broken into 1-inch florets (about 9 cups)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 2 tablespoons minced fresh rosemary or parsley
- ¼ cup Dijon mustard
- 1-2 tablespoons maple syrup or honey to taste
Get out and measure your ingredients.
Place cauliflower in a large bowl.
Combine the oil, mustard, syrup or honey, garlic powder and salt.
Brush over cauliflower or toss to coat
Preheat an outdoor smoker to 250 degrees F (120 degrees C).
Add hickory and apple wood chips according to manufacturer's instructions.
Place on the rack of the preheated smoker and smoke until tender, about 2 hours.
Smoke until cauliflower is tender and lightly browned, stirring occasionally.
Sprinkle with parsley or rosemary to serve.
