Easy Zucchini Pizza Bites are tasty, low carb, keto, oven baked, frugal snack. Who can resist such an easy, cheesy, zucchini pepperoni pizza rounds recipe?
In a medium sized bowl toss zucchini slices in olive oil. Sprinkle with salt and pepper. Toss and sprinkle with more salt and pepper.
Broil or sauté the zucchini slices until just tender, about 2 minutes per side.
Preheat your oven to broil. Prepare a baking sheet with tinfoil and cooking spray. Place tender zucchini slices on your prepared baking sheet, as evenly spaced apart as possible.
Top each slice with sauce, a pinch of oregano or italian seasoning if desired, cheese and then a pepperoni slice.
Broil until the cheese has melted and the pepperoni is browned, just a few minutes. Serve immediately. Enjoy!
