Easy Ham and Egg Cups are fast and so simple to make. The perfect breakfast or brunch! You can easily serve these eggs with toast to dip in the yolk or you can pick them up and eat them!

Preheat your oven to 400 degrees.
Lightly coat muffin cups with cooking spray. Fit 1 slice of ham into each muffin cup as best you can. The ham will not fit perfectly and some of your egg may run outside the ham into the cup. This is ok.
Crack 1 egg into each cup.
Bake in middle of your oven until whites are cooked but yolks are as you like, between 12-15 minutes. Sprinkle salt and pepper on each egg before serving if needed. Remove ham and egg cups carefully. Sprinkle with chopped green onions if desired. Serve immediately. Enjoy!
