Slow Cooker Lemon Chicken

Ingredients

  • 9-12 chicken thighs, boneless, skinless
  • 2 carrots, chopped
  • 2 celery ribs, chopped
  • 1 large onion, chopped
  • 2 tblsp garlic, minced
  • 4 leaves bay-
  • 1 tblsp oregano, dried (ground or leaves)
  • 1 teaspoon salt -
  • 1 teaspoon pepper -
  • 1 ½ cups chicken broth -
  • ¼ cup all-purpose flour -
  • 2 tblsp lemon juice or 1 lemon - more or less to taste

Instructions

  • In your slow cooker sprinkle carrots, celery, onions, garlic, bay leaves, oregano, salt and pepper as evenly as possible. Add broth and and stir. Place chicken on top. Cover and cook on low 5 ½ to 6 hours. Discard bay leaves. In a small bowl whisk flour with 1 cup of the cooking liquid together until smooth. Add lemon juice and whisk into the slow cooker, cover and cook on high until thickened, about 15 minutes. Serve over rice or pasta. Enjoy!
