Julie's Fabulous Slow Cooker Pork Roast or Chops

These Fabulous Slow Cooker Pork Roast or Chops are so tender and tasty.  Every time.  I love the gravy on mashed potatoes or rice.

  • large slow cooker


  • 4-6 pork chops loin or center cut, boneor boneless, 1 inch thick
  • 2 cups tomato or tomato based pasta sauce
  • 1 cup soy sauce
  • 1 cup brown sugar, packed
  • 2 tblsp garlic, minced
  • 2 tblsp ground mustard
  • 2 tblsp grainy mustard
  • 2 tblsp dijon or yellow mustard


  • Spray your slow cooker with cooking spray. 
  • Place pork chops or roast inside. of your slow cooker.  
  • In a medium sized bowl combine tomato sauce, soy sauce and brown sugar with a whisk. Add garlic and both of the mustards.  Continue to whisk until blended together.  
  • Pour mixture over top of your pork chops or pork roast. Cover and cook on low for 6-8 hours, on high for 3-4 or until meat is cooked. Remove pork chops or roast from slow cooker and dip or paint on some juices on top if desired. I love putting a scoop of juices on my mashed potatoes or rice too!  Serve and enjoy!

For a Thicker Gravy

  • If you prefer a thicker gravy just put your slow cooker on high or pour the juices into a pot on your stove top.  Boil the mixture and in a small bowl combine 2-3 tablespoons cornstarch with enough water to make a smooth paste.  Add to boiling liquids and stir until blended.  I would allow mixture to boil for about 10 minutes, if not a little longer.  It is up to you.  Both are delicious.
