Chocolaty Three Layer Cookie Bars


  • 1 ¼ cup all-purpose flour -
  • cup cocoa
  • ¼ cup brown sugar, packed
  • cup sugar -
  • ½ teaspoon salt -
  • 1 teaspoon baking powder -
  • ½ cup butter - cold, cubed
  • 2 large eggs

Top Layer

  • 1 bag coconut flaked
  • 1 can (14 oz) sweetened condensed milk
  • cup peanut butter creamy
  • 2 cups chocolate chips semi-sweet
  • cooking spray


Preheat your oven to 350 degrees.  Prepare a 9 x 13 inch pan, or the equivalent, with cooking spray.  Set aside.  In a large bowl combine flour, sugars, cocoa, salt and baking powder.  Add butter and mix until crumb like.  I find it easier to use my hands for this and my friend Julie uses a large fork.  It is up to you to decide if you want to get your hands dirty or not!  Both ways work.  Add eggs and mix until fully incorporated.  Spread mixture into your prepared pan.  Try to make the crust as level as possible.  Bake for 8 minutes. Remove from oven and sprinkle coconut all over it.  Drizzle with condensed milk. Return to your oven and bake for another 20-25 minutes or until lightly browned. Meanwhile in a small saucepan over medium low heat, or in your microwave, melt chocolate chips and peanut butter together.  Be careful not to burn the chocolate.  If you are using the microwave heat the chocolate in 30 second intervals. Stir chocolate after each 30 seconds until smooth.  Spread over top of your coconut and crust.  Allow to cool on a wire rack. Cut into bars and serve.  Store in an airtight container in your refrigerator.
