Lemon Pudding Cake

Simple Lemon Pudding Cake is super moist, so light, uses only a few ingredients and perfect for any occasion! This recipe is a definite keeper!



  • 1 package lemon cake mix
  • 1 package instant lemon pudding mix 4 serving size
  • 4 large eggs
  • 1 cup cold water
  • cup vegetabke oil


  • 1 ½ cup cold milk
  • 1 package instant lemon pudding mix 4 serving size
  • 1 tub dessert topping mix


For the Cake:

  • Preheat your oven to 350 degrees. Prepare a 13x9 inch pan with cooking spray and set aside. 
  • In a large bowl combine cake mix, instant lemon pudding mix, eggs, water and oil. 
  • We usually use a handheld mixer to blend these ingredients together for a few minutes.
  • Pour into your prepared pan.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean. This cake will also bounce back when pressed with your finger when cooked.
  • Cool for about 15 minutes in the pan before dumping on to a rack to cool completely. Prepare your icing.

For the Icing:

  • Pour cold milk into a deep, narrow bowl. 
  • Add instant lemon pudding mix and dessert topping mix.
  • Beat slowly with a handheld blender until combined.
  • Then increase your speed until mixture forms still peaks, about 5 minutes. 
  • Spread all over cake. Serve and enjoy!
