    The Chewiest Chocolate Cookies

    I had to make these cookies the other day. I was in the mood for chocolate and these cookies always satisfy my chocolate cravings! Then, as I started to work, I checked and I could not believe that I hadn’t posted this recipe yet. These really are The Chewiest Chocolate Cookies I have ever tasted. Total chocolate cookie perfection.

    Ingredients
      

    • 1 cup egg whites
    • 1 ¾ cups cocoa powder -
    • ½ teaspoon salt -
    • 5 ½ cups powdered sugar
    • 1 ½ cups almonds, walnuts or pecans
    • ⅔ cup Reeses peanut butter chips -

    Instructions
     

    • Preheat your oven to 375 degrees. Line your baking sheet with parchment paper. Using a handheld or stand mixer combine egg whites, cocoa, salt and sugar on medium speed for about 6 minutes. Once the mixture stiffens up add nuts and chips and gently fold until incorporated.
    • Using two spoons place batter on top of parchment paper in small, tablespoon sized mounds. They will not look perfect. That is ok. They will taste perfect and look beautiful after baking! Bake for about 10 minutes. The cookies will look shiny, underdone and cracked. Do not overbake. Allow cookies to cool on the baking sheet. Eat and enjoy!
