Memories are just so precious to me. The older I get, the more sweet those time seem. I remember the exact way my grandmother’s kitchen smelled when she was baking these Sweet Lemony Crackle Cookies. It takes me back to a simpler time.
These cookies had been forgotten. My family was going through all of my grandmother’s recipes and stumbled upon this gem. We immediately remembered how great they tasted when I read the recipe.
I am going to shock you with my next statement. Are you ready? I don’t always want chocolate in my cookie. There I said it. Don’t get me wrong I love a good chocolate chip cookie. Just not every time I eat a cookie!
These Sweet Lemony Crackle Cookies are soft and light. They are refreshing rather than heavy. The hint of lemon adds a great flavor to the cookie.
The look of the cookie reminds me a lot of a snickerdoodle. You roll the dough in sugar in the same way you would those cookies.
These cookies would be a perfect addition to a light lunch with your girlfriends or a tea party in the afternoon!
Ingredients for Sweet Lemony Crackle Cookies
- butter
- brown sugar
- sugar
- egg
- lemon juice
- lemon zest
- flour
- baking powder
- baking soda
- raw sugar for rolling
How do you make Sweet Lemony Crackle Cookies?
Pour raw sugar onto a plate for rolling and set aside.
In a large mixing bowl combine butter and sugars, ideally with a handheld or stand mixer, until smooth.
Add egg, lemon juice and lemon zest. Beat until smooth.
Add flour, baking powder and baking soda. Scrape down sides of bowl as necessary.
Beat until no dry flour remains.
Roll dough into 1 inch balls and roll around in raw sugar until well coated. Place on cookie sheet.
Bake.

Sweet Lemony Crackle Cookies
Ingredients
- ½ cup butter, softened
- ½ cup brown sugar, packed
- ¼ cup sugar -
- 1 large egg -
- 3 tblsp lemon juice -
- 1 tblsp grated lemon zest -
- 1 ¾ cup all-purpose flour -
- 1 teaspoon baking powder -
- ½ teaspoon baking soda -
- ½ cup raw sugar - or more if necessary
- cooking spray
Instructions
- Pour raw sugar onto a plate and set aside.
- Prepare a rimmed baking sheet with cooking spray. Set aside.
- Preheat oven to 350 degrees.
- In a large mixing bowl combine butter and sugars, ideally with a handheld or stand mixer, until smooth.
- Add egg, lemon juice and lemon zest. Beat until smooth.
- Add flour, baking powder and baking soda. Scrape down sides of bowl as necessary.
- Beat until no dry flour remains.
- Roll dough into 1 inch balls and roll around in raw sugar until well coated. Place on cookie sheet.
- Bake for 12-15 minutes or golden. Let cool on cookie sheet for at least 5 minutes before placing on a wire rack to completely cool.
