    This Slow Cooker Sausage, Bacon and Lentil Stew is a perfect meal for any occasion. This is another awesome recipe from my friend Marcel. You can include whichever vegetables you have on hand and whether you use bacon or pancetta you will not be disappointed. This recipe is a keeper.

    Slow Cooker Sausage, Bacon and Lentil Stew

    Ingredients
      

    • 1 pound sausage, garlic, italian or kielbasa, chopped
    • 3 carrots, chopped
    • 3 celery ribs, chopped
    • 1 large onion, chopped
    • 1 cup peppers, green, yellow, orange or red, cored, chopped
    • 2 cups lentils, green or red
    • 1 cup pancetta or bacon, diced
    • 2 tblsp thyme, dried
    • 3 tblsp garlic, minced
    • 5 leaves bay-
    • 1 teaspoon salt -
    • 1 teaspoon pepper or cayenne -
    • 4 cups chicken broth -
    • 2 tblsp red wine vinegar
    • 1 - 2 tblsp parsley, dried more or less to taste
    • ½ cup sour cream - or more to taste

    Instructions
     

    • In your slow cooker combine sausages, carrots, celery, onions, lentils, pancetta or bacon, thyme, garlic, bay leaves, salt, pepper or cayenne, broth and ½ cup water. Cover and cook on low until lentils are tender, around 8 hours. Then remove bay leaves, add in vinegar and parsley. Serve with sour cream. Enjoy!
