Meatless Lunch Burrito
The filling is so yummy in this delicious wrap! A great lunch for any day of the week! So easy to prepare, this is a recipe you will make over and over again. This Meatless Lunch Burrito is perfect for any day of the week!
- 1 cup cheddar , shredded we used white cheddar
- 1/2 cup refried beans
- 1/2 cup pico de gallo or your favorite salsa
- 1/4 cup coriander, fresh, chopped
- 2 radish, fresh, sliced
- 1 ripe avocado, seeded, chopped and mashed
- 1 jalapeno, seeded, sliced
- 2 cups rice, cooked we used brown
- 4 large flour tortillas
- 1/4 cup guajillo chile dressing or your favorite variety, we have used Italian in the past
We love making wraps. This one is awesome. Amounts shown are approximate. Also some people will not appreciate and use some of the ingredients. I love radishes and ken does not so I end up using his! Keep this in mind when setting up your workstation and preparing ingredients. Now we shall get started.
Cook your rice according to the package directions. When cooked, add dressing slowly and toss or stir into rice until rice is lightly coated. Add dressing little, by little and keep stirring until coated. Sometimes the rice will absorb more dressing then others and you do not want the rice soupy or swimming. Just coated in the dressing. Set aside. Place a cutting board at your workstation. Prepare your jalapenos and place them in a small dish beside the cutting board. Place the mashed avocado, shredded cheese, refried beans, salsa, coriander and radishes in their own dish surrounding your cutting board. Place a tortilla on your cutting board. If the tortilla is stiff microwave for 5-10 seconds to soften. Smear refried beans in the middle of your tortilla. Place a pile of rice on top. Add your salsa, cheese, avocado, coriander, radish and jalapeno. Fold the bottom of your wrap up and over the pile and fold a side over and roll it up as tightly as you can. Set aside and repeat. Serve and enjoy!
